Hygiene regulations

Meat, fish and poultry processing businesses and
egg product processing businesses

In rooms in which meat, fish, poultry or egg products are derived, prepared or handled there must be, as near as possible to the workplaces and in adequate number, facilities which must not be operated by hand with running hot and cold - or premixed to an appropriate temperature - water for the cleaning and disinfecting of hands. Hand washing facilities in the associated toilets must be equipped with fittings which are not operated by hand.

Milk handling and processing businesses

In rooms in which milk output products are handled, prepared or processed and the products are manufactured, there must be, as near as possible to the workplaces and in adequate number, facilities with running hot and cold - or premixed to an appropriate temperature - water for the cleaning and disinfecting of hands. In the workrooms and the toilets the fittings must not be operated by hand. Means for cleaning and disinfecting must be present as well as hygienic means for drying hands.

Large kitchens, catering establishments, hospital kitchens and
comparable facilities for canteen meals

In the kitchen and, as far as required also in workrooms, hand washing basins must be present in appropriate numbers. In every case, separate hand washing basins are to be provided in the workplaces for meat, fish, poultry, vegetables, pastry and ready-cooked meals. Hand washing basins must be supplied with hot water from a mixer unit. The water outlets must not be operated by hand or arm.

Medical areas such as hospitals, medical laboratories,
doctors' surgeries etc.

In working areas with an increased danger of infection, hand washing places must be provided for employees with no-contact controlled fittings.
